This Organic Cabernet Sauvignon boasts nice aromatics of dark rich black fruits like blackberry and black currant, along with a hint of tobacco on the nose. Along with bright and youthful flavors on the palate of focused ripe blueberries, you get the complexity of cassis, mocha, and a touch of molasses. This leads to a nice dark fruit finish that is balanced with medium tannins and a slight touch of acidity.
WINEMAKER’S NOTES
All the components from this great Cabernet Sauvignon were harvested in the month of October except for the Malbec which was harvested in mid September. We achieved optimal ripeness in the fruit during this great extended growing season. All the lots were fermented in upright stainless steel fermenters with PDM yeast, with 100% malolactic fermentation was completed in stainless steel tanks.
